In some Barbera vineyards, where the soils are poorer, the clusters tend to ripen early, drying directly on the vine. Since 2018, we have begun selecting these clusters, harvesting them in multiple passes through the rows. Scolmo is an oxidative wine, as it rests in partially filled barrels, and perpetual: it is made by allowing different vintages to age together, adding the new wine to the barrels each year.
